  • Spinach 180gr
  • Olive oil 10 ml
  • Salt and peper
  • Lemon juice – 10ml
  • Parmesan 5 gr

Cooking time: 20 min

  1. Rinse the quinoa and place it in a small baking dish.
  2. Add fresh or frozen spinach to the dish.
  3. Pour water (three times the volume of quinoa), oil, salt, and pepper over the ingredients.
  4. Squeeze lemon juice over the mixture.
  5. Bake at 180°C (350°F) for 20 minutes.
  6. Sprinkle shredded parmesan on top before serving.
