- Salt and peper
- Lemon juice – 10ml
- Parmesan 5 gr

- Rinse the quinoa and place it in a small baking dish.
- Add fresh or frozen spinach to the dish.
- Pour water (three times the volume of quinoa), oil, salt, and pepper over the ingredients.
- Squeeze lemon juice over the mixture.
- Bake at 180°C (350°F) for 20 minutes.
- Sprinkle shredded parmesan on top before serving.
