Ingredients
For one portion:
- 33g onion
- 133g sweet potatoes, peeled and diced
- 1/3 vegetable stock cube
- 1 ml of olive oil
- 60 g chicken breast, cooked and shredded
- Salt and pepper to taste
First cut onion and potatoes .
- Add a little little bit of olive oil ,nion and sweet potatoes to the pot together.
- Pour in the vegetable stock , add additional water to cover the potatoes.
- Season with salt and pepper to taste.
- Bring the mixture to a boil over medium heat.
- When veggies are soft add the chicken and boiled for around 10 min
- Check if the chicken is cooked through (no longer pink in the center) before proceeding.
- Using an immersion blender or transferring the soup to a regular blender, blend the soup until smooth and creamy.
- Adjust the seasoning with salt and pepper if needed.
- Serve the Sweet Potato and Chicken Soup hot. Garnish with fresh herbs, if desired.
