For one portion:

  • 33g onion
  • 133g sweet potatoes, peeled and diced
  • 1/3 vegetable stock cube
  • 1 ml of olive oil
  • 60 g chicken breast, cooked and shredded
  • Salt and pepper to taste

First cut onion and potatoes .

  1. Add a little little bit of olive oil ,nion and sweet potatoes to the pot together.
  2. Pour in the vegetable stock , add additional water to cover the potatoes.
  3. Season with salt and pepper to taste.
  4. Bring the mixture to a boil over medium heat.
  5. When veggies are soft add the chicken and boiled for around 10 min
  6. Check if the chicken is cooked through (no longer pink in the center) before proceeding.
  7. Using an immersion blender or transferring the soup to a regular blender, blend the soup until smooth and creamy.
  8. Adjust the seasoning with salt and pepper if needed.
  9. Serve the Sweet Potato and Chicken Soup hot. Garnish with fresh herbs, if desired.
